  • 2 tsp McKay’s Chicken Style Instant Broth & Seasoning (optional) or any chicken-flavored seasoning

  • 2 cups vegetable broth

  • ¼ cup olive oil

  • 1 tbsp Bragg Liquid Aminos or low-sodium soy sauce

  • 1 sheet vegan puff pastry (optional, for extra “skin”)


Instructions:

  1. Combine Dry Ingredients: In a large mixing bowl, add the vital gluten flour, nutritional yeast, thyme, rubbed sage, onion powder, salt, and optional chicken-style seasoning. Stir everything together until evenly mixed.

  2. Mix Wet Ingredients: In a separate bowl, whisk together the vegetable broth, olive oil, and Bragg Liquid Aminos or soy sauce.

  3. Form the Dough: Slowly pour the wet ingredients into the dry mixture. Stir until the dough begins to come together. Knead the dough for about 3-4 minutes until it forms a firm, elastic ball.

  4. Shape the Loaf: With your hands, shape the dough into a loaf, roughly the size of a traditional turkey breast. Wrap it tightly in cheesecloth, and tie off the ends with string or kitchen twine.

  5. Cook the Loaf: Bring a large pot of water to a boil. Once boiling, drop the wrapped loaf into the water. Reduce the heat to medium and cook for about 1 hour. The loaf will firm up and hold its shape.

  6. Optional Puff Pastry “Skin”: After the loaf is cooked, you can leave it as is for a simple presentation, or you can make it even more festive with a puff pastry skin.

    • Preheat the oven to 400°F.
